FOOD CONSUMPTION AND NUTRITION: NEW TRENDS AND EMERGING ISSUES

This publication explores sustainable answers to the challenges related to the global shift in consumption patterns, known as nutrition transition. Indeed, deviations in food consumption patterns are creating a pressing need of sustainable solutions able to support both food production dynamics and nutrition related issues, particularly in light of the increased demand of livestock products that is currently taking place. Livestock farming intensification - with its important environmental impacts - is now a key issue in the framework of food production that calls for tailored measures aiming to meet the rapidly changing needs of a growing population.
