This publication considers some virtuous cases of modern food technologies, which, by applying the latest scientific findings in nutrition and food science, has led to the creation of high-value food products. Even if food industry has been pointed out as the major driving force responsible for a world dominated by unhealthy foods and drinks, the cooperation between the research arena and private R&D initiatives would certainly result in the application of new findings in food technologies, thus, constituting a keystone for promoting health and proper nutrition worldwide.
